Ingredients

  • 4–5 pickling cucumbers, cut into spears or coins
  • 2 cloves garlic, lightly crushed
  • 4 sprigs fresh dill
  • 1 tsp black peppercorns
  • 1 cup water
  • 1 cup 5% acidity white vinegar
  • 1 tbsp kosher or pickling salt

Instructions

    Pack cucumbers, garlic, dill and peppercorns into a clean 1-quart jar.

    Bring water, vinegar and salt just to a boil, stirring until salt dissolves.

    Pour hot brine over cucumbers, leaving enough room to close the jar.

    Cool to room temperature, cover and refrigerate.

    Chill at least 48 hours before eating for best flavor.

Storage

Refrigerator pickle only. Keep refrigerated and use within about 6–8 weeks. Do not store at room temperature.
