Ingredients
- 2 lb (900 g) potatoes, peeled and cubed
- 1/3 cup finely chopped onion
- 2 cloves garlic, minced
- 2 tbsp chopped parsley or chives
- 1/2 cup breadcrumbs
- 1 large egg
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp oil for pan-frying
Instructions

Boil potatoes in salted water until fork-tender, 12–15 minutes. Drain very well.

Mash potatoes and let cool for 5 minutes so excess steam escapes.

Mix in onion, garlic, herbs, breadcrumbs, egg, salt and pepper.

Shape into 12 small balls or patties with lightly damp hands.

Pan-fry in oil over medium heat for 3–4 minutes per side until golden. For an oven version, bake on a greased tray at 375°F (190°C) for about 20 minutes, turning once.
Storage
Refrigerate up to 4 days. Reheat in a skillet, air fryer or 375°F (190°C) oven until hot throughout.
