Ingredients

  • Freshly harvested mature onions with intact skins
  • Freshly harvested mature garlic bulbs
  • Mesh bags, slatted crates or breathable baskets

Instructions

    Brush off loose soil without washing the bulbs.

    Cure onions and garlic in a dry, shaded, well-ventilated place for 2–4 weeks until outer skins are papery and necks are fully dry.

    Trim onion tops to about 1 inch and garlic stems to about 1–2 inches, leaving skins intact.

    Discard any soft, damaged or moldy bulbs for immediate use rather than long storage.

  5. 5

    Store in breathable containers in a cool, dark, dry place with good airflow. Keep away from potatoes, which release moisture and gases that can shorten storage life.

Storage

Check stored bulbs every few weeks and remove any that soften, sprout heavily or show mold. Storage life varies by variety and conditions.
